No, lefse isn't really like tortillas. Tortillas are made from corn and lefse is made from potatoes. Also lefse is generally eaten with butter, sugar and cinnamon while tortillas will have meat, cheese, tomatoes, etc.

I had to laugh when I was looking up lefse recipes and saw the title "Rural Route 2 cookbook". My Norwegian grandmother, whose recipe I was trying to find lived on Rural Route 2 in Koochiching County, MN. Small world!

I just made a batch of lefsa as i call it from mom's and grandmas recipe,
8 cups flour
4 cups milk richer the better
slab of butter with tablespoon
heat milk with butter until just boil point.
pour into flour and mix add flour if needed until dough is workable with your hands without getting fingers stuck in dough.
grab a handful of dough roll it out thin as possible on a flour sprinkled clean area.
then put it on the electric griddle until it bubble browns both sides.
I use vinegar to clean a big area on the cupboard to work . don't like working in a shoe box when I am baking.
Then when you are done turn around to have some lefsa and you may be lucky to wrestle someone down for a chunk.
this a simple as you can get recipe and slap some jam or lay lettuce, Swiss chard , make a roll add more etc. add sandwich meat, beer . just kidding. I like the potato lefse also.I have used brown flour and had good results. Next is garlic .
